Meatloaf is a good meal for when you’re at home but don’t have much time to spend in the kitchen. Mix up a meatloaf, scrub and prick some potatoes and pop it all in the oven at the same time. Mix up a salad and you’ve got a quick meal. This recipe is my go-to meatloaf, and I just add some stevia to the ketchup instead of using rapadura.
This meatloaf can be made grain-free by using coconut flour. You can replace the breadcrumbs to rolled oats in most ground beef dishes with coconut flour until the mixture binds together. Coconut flour works especially well in ground turkey dishes, as I find ground turkey to be wetter than ground beef. Pressing out the ground meat before you mix the meatloaf can be helpful when the meat is too wet.

1 cup ketchup
1/3 cup rapadura, stevia to taste or a mix of the two
¼ cup lemon juice
2 tsp dry mustard
2 lbs ground beef
2-8 ounces beef liver, ground, optional
½ cup bread crumbs, quinoa flakes or quick rolled oats or 2-4 Tbs coconut flour
½ onion, diced
3 cloves garlic, pressed
1 tsp salt
½ tsp pepper
2 Tbs beef stock or water, if needed
Preheat the oven to 350 degrees.
In a bowl, combine the ketchup, rapadura, 2 Tbs lemon juice and dry mustard. Set aside.
In a separate bowl, combine the remaining lemon juice, ground beef, liver, bread crumbs, onion, garlic, salt and pepper. Add in 1/3 of the ketchup mixture and mix gently. Add the beef stock or additional bread crumbs if needed to get the mixture to stick together. Form into a loaf in a baking pan or bread pan.
Bake for 1 hour. Pour off the fat and cover the top of the loaf with the remaining ketchup mixture. Bake an additional 15 minutes.
